Summer Berries and Cocoa Cream

This is a simple dessert that comes together in less than 10 minutes and doesn’t require you to heat up the kitchen! Perfect for summer! Enjoy my take on classic berries and cream.
What Ingredients do you need for berries and cream?
There are just 5 ingredients in the simple dish! (I’m counting berries as one since you can choose one type or a blend).
-Summer berries (I like to use strawberries, blueberries, raspberries and blackberries when they are in season in my garden).
-heavy whipping cream
-cocoa powder
-maple syrup (you can use powdered sugar if you like)
-and orange or tangerine to zest (optional but adds a delicious little zing)

What’s the process for making summer berries and cocoa cream?
It’s super simple!
You start by cleaning your berries, and if you want, cut them into smaller pieces. I tend to cut just my strawberries.
Whip up some heavy whipping cream and combine it with cocoa powder and maple syrup.
Put your berries in a bowl and top with your whipped cream. Then zest a little citrus peel over the top.
Done! Enjoy!
A tip for making the whipped cream:
Sometimes people have a hard time getting whipping cream to whip up right. I have found two key tips that help more than anything.
1- Make sure your bowl and beater pieces are clean. Super clean. Don’t touch the inside of the bowl and get your finger oils on it.
2- Chill the bowl and whipping cream ahead of time. I often forget to plan ahead and I will just stick my bowl in the freezer before I start cleaning the berries. The cold helps the molecules in the whipping cream stay together and hold air.

- 4 cups mixed fresh berries (in season) I like strawberries, blueberries, blackberries and raspberries but use whatever is available to you that is in season.

- 1 Tablespoon unsweetened cocoa powder
- 2 Tablespoons real maple syrup you can substitute powdered sugar if you like
- 1 orange or tangerine

- Clean your berries and cut them if desired.
- Pour the cold whipping cream into a cold, clean mixing bowl. Add the cocoa powder and syrup. Start beating on low until mixed well, then slowly increase speed so you don't get splashes of cream all over. Once you've worked your way up to high speed, just let it be until stiff peaks form.
- Divide your berries into bowls. Top with generous dollops of the cocoa cream. Zest a bit of orange or tangerine over the top.

This is actually my favorite dessert, a very simple berries, and cream! Yummmmy I would not have thought to put cocoa in it though! The addition of tangerine sounds so refreshing also.
