Chocolate Strawberry Cheesecake Dessert Tacos

Want an easy dessert for warm spring days that use delicious seasonal strawberries? This one comes together pretty quickly. With baked cinnamon-sugar tortillas, a chocolate cheesecake filling, and sweet strawberries on top, you’ll rock the dessert game this season!

It starts with a crispy, cinnamon-sugar tortilla

I used to fry these. But I hate frying. So I recently tried this hack where you bake the tortillas and use an upside down muffin tin and I fell in love. It was not hard and was so less messy.

Just brush a flour tortilla (I used small ones for these) with melted butter. Sprinkle both sides with cinnamon sugar mixture. The place your tortillas in between the cups of the muffin tin.

I bake these at 350° for 10 minutes and then let them cool all the way.

Fill these shells with chocolate cheesecake mixture

Again, simple ingredients here. I just put softened cream cheese in my mixer with cocoa powder and powdered sugar. You could add vanilla if you like too.

Next I just pile on the chopped strawberries and sprinkle with some extra cinnamon sugar. We’re done! These delightful bits of goodness are ready to enjoy!

Prep these chocolate strawberry cheesecake dessert tacos ahead for an added bonus.

I love nothing more when I’m entertaining that having a lot of the work done ahead of time. You can bake these shells up to a day ahead and make the filling several days ahead. Then all you have to do is chop the strawberries and assemble.

You can also use a piping bag for the cheesecake filling but I’m not fancy like that.

Instructions
Start the shells
  1. Mix the cinnamon and sugar.
  2. Brush each side of each tortilla with melted butter and sprinkle each side with the cinnamon sugar mixture.
  3. Place the tortillas, gently folded in half, in between the cups of an upside down muffin tin to shape them. Bake at 350° for 10 minutes. Cool completely before using. Reserve extra cinnamon sugar for sprinkling on top.
Assemble the tacos
  1. Beat the cream cheese with the other remaining ingredients (except for the strawberries) until fluffy.
  2. You can use a piping bag or just spoon the mixture into your cooled taco shells. Top with a generous amount of chopped strawberries and sprinkle with the extra cinnamon sugar. Serve immediately and enjoy!
