How to Make Your Own Chili Powder

I don’t know about you, but I use a lot of chili powder in my cooking. When I moved several years ago, the brand I loved wasn’t available to me and all the ones I could find were too spicy for my family. I tinkered with several recipes until I came up with my own homemade chili powder recipe from scratch. It’s easy to make with ingredients you probably already have on hand.

Why would you want to make your own chili powder when you can buy it in the store?!

My number one reason is flavor! I make chili powder from scratch because I can make it as spicy or mild as I want to.

I can also make a big batch that’s mild, and adjust by adding more cayenne if I want it spicier for just occasional recipes. That means I’m having to store less in my pantry and I always like storing less items in the kitchen.

This DIY chili powder recipe also has a bolder flavor that’s more savory, without being more spicy. It’s a trick I learned from a friend who lives in Mexico. Her family added a tiny bit of cinnamon and cocoa powder when she was growing up. People might be surprised at how many Mexican dishes have some sort of unsweetened or dark chocolate in them.

Making it yourself means you also make it with the quality ingredients you love, without things that aren’t actually food but pervade our food system. Things like anti-caking agents, fillers, shelf-stabilizers, etc…. Homemade is the way to go.

You don’t have to worry about whether there’s hidden gluten or other food allergens. The list goes on and on.

It really takes VERY little time to make homemade chili powder!

On the day I made this I made four different mixes (which I will link below). I made the chili powder. I used some of it to make taco seasoning. I also made dry onion soup mix and ranch mix. It took me less than half an hour to make all of these, including gathering all the ingredients and supplies!


Tips for making mixes:

1- I find it easiest to gather all the ingredients for all the mixes I want to make and do them all at the same time. It actually takes longer to gather the ingredients than to make the mix! It also makes it more worth while when you buy herbs and ingredient in bulk.

2- Get out all the equipment first. You don’t need special stuff. Just bowls to mix it in, measuring cups and spoons, and jars or containers to store your mixes in. It goes more smoothly if you have a bowl out for each mix you’re making, and all the different measuring tools ready so you’re not stopping and hunting for things as you go.

3- Make them in bulk! This allows me to only have to make it once every few months. I go through chili powder pretty quickly, so I would be constantly buying it if I didn’t make it in bulk.

4- Make notes! You might want to change these mixes up the next time you make them. I changed my ranch recipe about 4 times before I got it exactly how our family likes it (and that’s the version linked below). We like less pepper and more garlic and dill. Each family and person is different. Make notes about which ingredients you might want to adjust up or down for next time! Maybe you want it spicier, add more cayenne! Maybe you want less of the earthy oregano flavor, decrease the amount. Adjust it to your personal taste. I’m always saying that’s the number reason to cook as much as possible from home, so that things are tailored perfectly to your own tastes.
