Whole Wheat Einkorn Biscuits

When I started baking with einkorn flour a couple of years ago, the first thing I mastered was converting my mom’s biscuit recipe to whole wheat einkorn biscuits. These biscuits are still light and fluffy as a biscuit should be, but with the added benefit of being made with einkorn flour for us gluten intolerant people. (Gluten intolerant, not celiac. Celiacs cannot have these. Einkorn is wheat).

Einkorn Biscuits Can be Light and Flaky!

These biscuits are not dense or heavy. They are airy and flake apart just like a biscuit should. They are perfect for jelly, a breakfast sandwich, or (my favorite application) biscuits and gravy.

I know, hard to believe, right?

My experience with whole wheat flour in general is that it makes things a lot heavier. Not the case with these biscuits! They have a regular biscuit texture. My middle kid is very picky about her bread textures and she loves these.



Important Tips for Getting Perfectly Textured Einkorn Biscuits!

1- When it comes to biscuits, as with any quick bread like muffins and scones, do not overwork the dough! That makes them tough! Work it only until the ingredients are combined.

2- Gently patting out the dough to about 3/4″ instead of rolling helps with being gentle with the dough.

3- When you cut your biscuits, use a straight up and down motion with your biscuit cutter. Do not twist the biscuit butter. Twisting seals the edges and keeps them from rising as much.



Where do I get my Einkorn Flour?

Azure standard! I get it there because it’s less expensive. I get my both my whole wheat einkorn and my all purpose einkorn from them because it’s the lowest cost I have found. It’s lower than the grocery store (there’s only one near me that carries it and it’s not really close anyway). It’s lower cost than Whole Foods and Earth Fare too.

Here’s what you need to know about ordering it from Azure:

For whole wheat, I buy the Azure standard brand. They call it “unifine”, but it’s equivalent to the other brands of whole wheat. You can also get Jovial brand which is probably the most well known brand of einkorn flour out there and the easiest to find.

For all purpose, Azure does not have their own brand so I buy the Jovial brand of all purpose Einkorn. You can order it in many sizes and save money buying it bulk.

The next cheapest place to get einkorn is buying the jovial brand from Amazon. They actually have a listing with both all purpose and whole wheat einkorn if you want to experiment with both.

Whole Wheat Einkorn Biscuits
These light and flaky biscuits are everything a biscuit should be, but made with einkorn flour in stead of regular flour.

Instructions
  1. Preheat the oven to 450°.
  2. Mix all the ingredients just until combined. Do not over handle the dough or it will be tough.
  3. Pat out the dough onto a lightly floured surface until about 3/4" thick.
  4. Use a biscuit cutter to cut the biscuits using a straight up and down motion. Do not twist the biscuit cutter.
  5. Put a little oil (non flavored, such as avocado oil, or more melted butter) into a pie plate. As you cut the biscuits, lay the in the pie plate, flipping them over so both sides have been lightly oiled.
  6. Bake until golden, between 20-30 minutes. Enjoy!
