Sweet Mustard Chicken – An Easy Freezer Meal

This freezer recipe has all the flavor and so little effort. I usually bake the chicken but it also does well in the crockpot. It’s one of many chicken freezer meals I make at the beginning of busy seasons, like the holidays.

I don’t normally stock my freezer with premade freezer meals, but I make an effort to do so right before the holidays and right before the spring craziness (end of school year activities, spring sports, graduations, etc…). I find it totally worth it to take time to make a few things ahead, but…

I have a cardinal rule for freezer meals:

They absolutely MUST be easy and fast to assemble. I don’t want to take all day to make a few meals. I want to just assemble some ingredients and have a dinner that’s ready to dump in the crock pot or bake in the oven. It has to be fast on both ends. Otherwise it’s not worth it to me.

This Chicken Recipe is a Family Favorite!

It’s a dump and go recipe. Whether I bake it in the oven or dump it in the crockpot, a few ingredients get mixed and poured over the chicken. Then end. Ready to cook. And it’s delicious!

Basic Pantry Ingredients are a Bonus!

This recipe uses stuff I always have on hand!

-cider vinegar

-dijon

-garlic

-lemon and lime juices

-brown sugar

-salt and pepper

-olive oil

I know that doesn’t sound ground breaking or unusual, but this combination of flavors goes so well together; and, even though they seem like very common ingredients, the flavor is anything but common. Trust me on this one.

I like to serve it over brown rice and pour extra marinade over both the rice and chicken. That’s not what I did in the above picture, but that’s what I normally do.

Instructions
To Bake:
  1. Preheat oven to 375°.
  2. Mix everything but the chicken in a medium bowl.
  3. Place the chicken in a casserole dish. Pour the sauce over the chicken. Bake for an hour, turning the chicken over half way through. When it's done, you can use the extra marinade as a sauce since it cooked along with the chicken.
To Crockpot:
  1. Place the chicken in the crockpot.
  2. Mix the other ingredients in a medium bowl and then pour it over the chicken.
  3. Cook on low 3-4 hours or high 6-8. You can serve this with the remaining sauce spooned over the top since it cooked along with the chicken.
To Make a Freezer Meal
  1. Mix the sauce ingredient as directed above. Place the chicken in a gallon freezer bag or container of your choice. Pour the sauce over the chicken. Seal and label the bag, squeezing out any air. Freeze.
  2. To make the freezer meal, thaw the chicken and then bake according to the oven or crock pot directions above.
