Make Your Own Mayo and 1,000 Island Dressing!
Making your own mayonnaise is easier than you think with the help of an immersion blender. And making your own 1,000 salad dressing is even easier!

With a few simple ingredients and just a few minutes, you can make some of your favorite condiments!
This post will be short and sweet because this process is short and sweet! If Google doesn’t want to rank me because I don’t have enough words, oh well.
What You Need:
Note: everything works best when it’s room temperature.
For the DIY mayo:
-raw eggs (I use my fresh chicken eggs, so if you get yours from the store you might want to make sure they’re pasteurized, which they usually are).
-lemon juice
-a light oil (my favorite is grapeseed oil)
-salt
-dijon mustard
For the thousand Island salad dressing:
-mayo (use what you just made!)
-ketchup
-sweet relish
How to make them:
For the mayo:
I like to let the eggs sit in a jar with the lemon juice for about 20 minutes.
Then add the oil, salt, and dijon. Use a stick blender to blend it all up straight in the jar. It’s super fast! You know you’re there when it’s all blended together and thick. Don’t take it too far or you’ll break the emulsification.
For the DIY salad dressing:
Put some mayo in a bowl, add ketchup and relish and mix. Viola! You’ve got thousand island dressing!

- 2 whole eggs, raw
- 2 Tbsp lemon juice up to 1/4 cup, suit to taste (I use 1/4 cup but mine is a bit tart)
- 1 1/2 cups grapeseed oil
- 1/2 teaspoon salt
- 1 Tablespoon dijon mustard

- Let the eggs and lemon juice hang out in a quart size, wide mouth mason jar. About 2o minutes. Then add the oil, salt, and dijon.
- Use an immersion blender to mix the ingredients until emulsified and thick. Everything should be incorporated. Do not over mix.
- Mix all ingredients in a bowl. Taste and adjust the ketchup and relish levels to your liking/sweetness levels.
