Crockpot Korean BBQ Beef Burritos
This Korean BBQ recipe combines all the best asian flavors with the convenience of a crockpot and packaged up in a burrito.

What do you need to make this delicious but effortless meal?
Obviously, a crockpot. You can actually also make this in an instant pot. I’d put the ingredients for the roast in for about 1.5 hours.
Other than that – for the Korean BBQ Beef you need mostly pantry ingredients:
-a roast (2-3 pounds)
-beef broth (you can sub chicken if that’s what you have on hand.)
-brown sugar
-soy sauce
-garlic (I used minced but you can also use powder and cut it in half)
-ginger (I used dried powder, but you can also use fresh and increase the amount a bit)
-sesame oil
-rice vinegar

For the slaw you need:
-red cabbage, sliced thin
-shredded carrots
-green onion
-cilantro
-lime
-brown sugar
-sesame oil
-salt
And to make it fabulous you also need:
-cooked rice (I love jasmine rice for this but you can use white or brown or basmati)
-sriracha mayo (super easy to make but you can buy it too).

This comes together in 4 easy steps!
1- Crock the beef!

2- Make the slaw. (You can make it ahead if you want them ready to assemble at dinner)

3- Make the rice. (I use the instant pot almost every time I make rice now).
4- Assemble the burrito!

Bonus! These make a great bowl too!
Don’t do tortillas? Skip it and put it in a bowl! You can make these gluten free by swapping out the soy sauce for coconut aminos or tamari as well!

- 2-3 pound beef roast
- 1/2 cup beef broth
- 1/4 cup brown sugar, packed
- 1/4 cup soy sauce make it gluten free by using coconut aminos or tamari instead
- 1 Tablespoon minced fresh garlic
- 2 teaspoons ground ginger
- 1 Tablespoon sesame oil
- 1 Tablespoon rice vinegar
- 1 1/2 cups shredded red cabbage
- 2 whole carrots, shredded
- 1/4 cup chopped cilantro
- 2 green onions, tops only, sliced
- 1 whole lime
- 2 Tablespoons brown sugar
- 2 teaspoons sesame oil
- 1/2 teaspoon salt
- 8 whole burrito sized tortillas
- 3 cups cooked jasmine rice

- Combine all the ingredients for the beef in a crockpot and cook on low 6-8 hours, until beef is tender and easily shredded.
- Combine all the slaw ingredients in a bowl and set aside until ready to make burritos.
- Combine the sriracha and mayo well. It's nice to have it in a squeeze bottle but not necessary.
- Lay out a warm tortilla. Put the beef, slaw, and rice in. Top with some sriracha mayo. Roll and enjoy!
