Yellow Wax Beans Roasted With Pancetta
Yellow wax beans roasted with pancetta is one of those super easy side dishes, full of flavor, using one pan, and healthy too! Whether you have a plethora of these in the garden to use up (as I do) or you buy them from your local store or farmer’s market, these make a great addition to any meal and take very little effort.

  1. Preheat oven to 400 degrees. Trim ends of beans and string if necessary. I usually grow ones that don’t have much of a string and I pick them young and don’t need to take the strings off.
  2. Toss the beans on a sheet pan with the remaining ingredients. Massage the oil and seasonings into the beans gently so everything is coated.
  3. Roast in the oven on 400 for 20-25 minutes. I tend to go longer because I like them to just begin to get crispy. If you want them all soft with no crispy bits, go slightly less.
