  1. Start 1 tablespoon of olive oil in a saute pan and cook shrimp with half the garlic. While the shrimp cooks, put the remaining olive oil, parsley, cilantro, walnuts, lime zest, lime juice, and salt in a food processor and blend until it’s your desired consistency.
  2. When the shrimp is pink and cooked through, remove it with a slotted spoon. If the pan is dry you can add a dollop more of oil. Add the remaining garlic to the pan and cook for about 30 seconds. Then add the spinach and cook, stirring, until it just begins to soften and wilt. Remove from heat.
  3. If you’re using the pilaf, add it to the bowl or plate. Layer with spinach and shrimp and then drizzle the gremolata over the top. If you’re not using the rice pilaf, just use the spinach as a bed with the shrimp over the top. Drizzle with the gremolata.
