While the sausage is browning, add the other ingredients, EXCEPT for the tomato and balsamic vinegar, to the crockpot.
When the sausage is brown, add it to the crockpot and stir to combine. Cook on low 4-6 hours.
When the soup is ready, combine the tomatoes with the balsamic in a bowl. Ladle the soup into bowls and spoon a bit of the tomato topping over the middle.
Enjoy! Goes great with garlic breadsticks and even a few shreds of parm on top.
