Einkorn Oatmeal Chocolate Chip Cookies
All the great flavor and chewy texture of oatmeal chocolate chip cookies, but with einkorn flour!

Instructions
  1. Preheat the oven to 350°.
  2. Cream the butter and sugars in a bowl (I used a stand mixer but you can use a hand mixer). Then add the eggs one at a time.
  3. Add the remaining ingredients except the chocolate chips. Mix well.
  4. Fold in the chocolate chips.
  5. Drop by large tablespoons onto a lined cookie sheet. Press down slightly so they aren’t mounded. Keep them about 2″ apart. I fit 12 on one rimmed baking sheet.
  6. Bake for about 10 minutes. When they are starting to brown and look set they’re ready. Don’t over bake them. If you find they are spreading too much, put your dough in the refrigerator for 30 minutes and then bake. Some days they spread on me, some days they’re perfect.
  7. Let cool on the cookie sheet for a few minutes before transferring to a cooling rack.
