  1. Melt the bacon grease (or butter) in a pan and brown the ground beef in it. When the beef is about half way done, add the chopped onion and about half of the salt, pepper and garlic powder. Cook, stirring occasionally, until the beef is brown and the onions are softening.
  2. Add the flour to the pan and stir until it is incorporated and starting to brown. (1-3 minutes). Then add the broth and stir well. Add the chopped potato. Cover and cook until potatoes are just under fork tender. (about 10 minutes)
  3. Uncover and stir in 2 cups of the cheese, the cream, the corn, half the bacon, half the green onion, and the liquid smoke. Stir and heat just until the cheese is melty and the corn in warmed through. If you’re using frozen corn there is no need to thaw.
  4. Taste to see if you need more salt, pepper, or garlic. Ladle into bowl and top with more cheese, bacon, and green onions. Enjoy!
