Breakfast Fried Rice – A Leftover Makeover
Use what you have on hand, along with leftover rice, to make a delicious and filling breakfast that is healthy and only takes about 10 minutes!

  1. Melt half the bacon grease in the pan while you crack and beat the eggs. Scramble and cook the eggs in the grease. Remove to a plate.
  2. Put the remaining grease in the pan to melt. Add the rice and stir fry until coated. Add the bacon and most of the green onion and stir fry until heated through. If you want to add more ingredients this would be the right time for most of them.
  3. Add the eggs back into the pan. Make sure everything is broken up and mixed together. Remove from heat and serve with remaining green onions sprinkled on top.
