Use some of your beans in this salsa, filled with fresh veggies and packed with flavor. Eat with tortilla chips if you like, but using veggies dippers you can turn this into a filling lunch or light dinner.
In a small bowl, combine olive oil, vinegar, lime juice, salt, and pepper. Mix well and set aside.
Mix the other ingredients (except chips or dippers) in a salad bowl.
Pour the dressing over and mix again.
